Minestrone Soup


Olive oil - 1 tsp
onion : 1
Tomato :
canned tomato : 1/2 cup
cabbage shredded 1/2 cup
pasta sauce - 2 tbsp
carrot - 1
Potato - 1
Celery - 1 stalk
cheese to decorate
salt and pepper to taste
oregano - 1 tsp
cannellini white beans... 1/2 cup

method :

Heat olive oil add onion fry till pinkish then add vegetables carrot , potato, celery,oregano, cabbage and the beans fry for sometime.. add canned tomato , cut fresh tomatoes and boil the soup until the vegetables and the beans cook....add pasta sauce salt and pepper. Garnish with cheese and serve with garlic bread..

optional cal add beans, peas, chicken breasts...
