Mint chutney...


Mint chutney or pudina chutney..

Mint leaf (pudina) -1/2 bunch, cut and wash the mint leafs
urad dal ( 1 tsp
tamarind - small piece
onion 1
tomato 1
chilli pwd 1 /2 tsp
redchilli whole 2
mustard seeds 1/2 tsp
oil 2 tsp

heat a oil in a pan add urad dal when dal turns brown add tamarind piece, onion and fry till brown add redchilli whole and tomatoes and fry till tomato cooks add pudina leafs and chilli pwd and grind into paste when cool.. saute mustard seeds at the end...serve with hot soft itlys....yumm

Pudina chutney was my grandmoms fav side ...she used to make it often to serve with curd rice and other dishes...but the one she makes had no tomatoes was was more dry....for itly my mom inlaw makes it this way...and i love it....

Tomato garlic thokku



Tomato Garlic thokku
Tomatoes - 2
garlic - 5
redchilli pwd - 1 tsp
turmeric pwd - 1 tsp
Fenugreek seeds 1/2 tsp
asefeotida - 1tsp
mustard seeds - 1 tsp
gingerlly oil - 5 tsp
salt as per taste
Grind tomatoes into fine paste . HEat oil and add mustard seeds, fenugreek seeds,asefeotida and garlic and fry well till the raw smell goes...dont let it brown so much...add tomato paste and cook till it becomes thick , add turmeric , chilli pwd,salt,1tsp oil and simmer and boil until the oil floats.
best used with dosa,adai,peasaruttu,idli, and curd rice...
opt - can add tamarind and grind it with tomato...for more ripe taste...

Chicken Briyani





Chicken 1/2kg
marinate chicken with yoghurt 1/2 cup,
turmeric 1 tsp
chilli pwd 1 tso
corainder pwd 3 tsp
ginger garlic paste

Basmati rice - 2 cups
canola oil - 2 tbsp
spices - cinnamon 1", cloves - 4 cardamom pods -3 , bayleaf -3
curry leaves optional
chopped tomatos 2
sliced onion 1 big
green chilli , ginger garlic paste 2 tsp
mint leaves 1/2 bunch
chopped corainder leaves 1 small bunch
lime juice one small lime

Marinate chicken pieces with masala ginger garlic and yoghurt and lime juice. heat oil or ghee in a pan add onion fry till brown add ginger garlic and green chilli paste...when raw smell goes add tomatoes and fry till the tomato cooks and oil sperates add the marinated chicken pieces and cook ..add 2 cups washed basmati rice , mint leaves and coranider leaves and water 3 cups and keep for 2 whistles until the rice cooks.....

optional can add the chicken gravy with half cooked basmati rice in a rice cooker ...
tasty yummy briyani ready...
Briyani is always been my favourite and cant stop making it ...
