Mango Vellirika curry..Mango n Yellow cucumber

Mango Vellarika curry (typical kerala style curry)

Ingredients

1 raw mango

1 small yellow cucumber (cut in cubes) Vellrika

1/ 2 cup grated coconut

1/2 tsp jeera (cumin seeds)

1 tsp coconut oil 

a few curry leaves

1/2 tsp turmeric powder 1/2 tsp chilly pwd..

salt to taste

Mustard Seeds 1/2 tsp

Methi seeds 1/2 tsp

whole redchilli 2

Method

Peel & cut mango into medium sized pieces. Cook the cucumber & mango with turmeric powder n chilly pwd till well cooked.

Grind together grated coconut, jeera to a fine paste.
Add this paste to the cooked cucumber & mango & bring to a boil. Add salt to taste.

Heat coconut oil in a pan add mustard seeds and methi seeds curry leaf and whole redchilli n season it to the curry

serve with Plain rice n spicy dry vegetable....

1 tsp of coffee instant pwd
2 cups of Chilled milk
2 tbsp whipped cream optional..
...
Method:

Place all the ingredients in a blender n blend well ..Pour it in the glass n top it with crushed Chocolate..

Easy Potato Sandwich


Potato Sandwich | Aloo Sandwich ~ Easy Bachelors SAndwich

Ingredients:-

Potato-2 nos
Red chilli powder-1/2 tsp
Garam Masala powder-1/2 tsp
Cilantro leaf few
Butter or oil-1 tsp
Salt to taste
cumin seeds 1/2 tsp
turmeric pwd a pinch

Method:-

cook the potato till fully cooked.Keep aside. and mash them..Heat a pan add oil n cumin seeds n turmeric n mashed potatoes ..add chilli pwd garam masala n salt per taste n mix cilantro n make the filling...

Take 2 slice of bread butter one side of the bread n fill the filling on one side n toast n sandwich maker ..

serve with mayo n chill sauce...

: variation u can add onions before u add potatoes..can use green chili instead of redchillis..

Seasoned Buttermilk --yogurt

Buttermilk – 1/2 cup yogurt mixed with 1/2 cup water blended
Small onion (shallots) – 3
Ginger – 2 tsp, chopped
Green chili – 3-4
Red chili whole– 2
Turmeric powder – 1/4 – 1/2 tsp
Mustard – 1/4 tsp
Fenugreek – a pinch
Curry leaves
Salt
Oil

Heat oil in a pan & splutter mustard & fenugreek seeds. Add red chili, small onion, ginger, green chili, curry leaves. Fry it for 1-2 minutes. Add turmeric powder & salt. Mix well. Add buttermilk and stir. Stir continuously . It will take around 5-7 minutes. stir for a few more minutes...Serve with plain rice//

Sweet Lassi





Sweet Lassi ..Yogurt Sweetened Drink


1 cup of yogurt
½ a cup of water
3 to 5 teaspoons of sugar


Blend all the ingredients at high speed till frothy.

Makes two to three glasses of Lassi...

Serve Chill..

Relish it anytime...

Tawa Paneer






PANEER TAWA MASALA




1 cup paneer

1-2 tbsp oil

1/2 tsp ajwain

1 onion, finely chopped

1 tsp ginger-garlic paste

1 tsp red chilli powder

2 tomatoes

3 tbsp cream or sour cream

cardamon 2

cloves 3

1/2 tsp garam masala

finely chopped cilantro n ginger to garnish




Cut Paneer into cubes. Heat oil in a pan and add ajwain. Saute onions on medium heat

Blend ginger-garlic , sour cream, tomatoes,chilli pwd,cardamon n cloves into a paste.. add to the onions. Add the GM, stir and then add paneer. Mix well.

Turn the heat up and saute till all moisture dries up
Garnish with finely chopped cilantro. Serve hot with roti
