Mango Vellirika curry..Mango n Yellow cucumber

Mango Vellarika curry (typical kerala style curry)

Ingredients

1 raw mango

1 small yellow cucumber (cut in cubes) Vellrika

1/ 2 cup grated coconut

1/2 tsp jeera (cumin seeds)

1 tsp coconut oil 

a few curry leaves

1/2 tsp turmeric powder 1/2 tsp chilly pwd..

salt to taste

Mustard Seeds 1/2 tsp

Methi seeds 1/2 tsp

whole redchilli 2

Method

Peel & cut mango into medium sized pieces. Cook the cucumber & mango with turmeric powder n chilly pwd till well cooked.

Grind together grated coconut, jeera to a fine paste.
Add this paste to the cooked cucumber & mango & bring to a boil. Add salt to taste.

Heat coconut oil in a pan add mustard seeds and methi seeds curry leaf and whole redchilli n season it to the curry

serve with Plain rice n spicy dry vegetable....

1 tsp of coffee instant pwd
2 cups of Chilled milk
2 tbsp whipped cream optional..
...
Method:

Place all the ingredients in a blender n blend well ..Pour it in the glass n top it with crushed Chocolate..

Easy Potato Sandwich


Potato Sandwich | Aloo Sandwich ~ Easy Bachelors SAndwich

Ingredients:-

Potato-2 nos
Red chilli powder-1/2 tsp
Garam Masala powder-1/2 tsp
Cilantro leaf few
Butter or oil-1 tsp
Salt to taste
cumin seeds 1/2 tsp
turmeric pwd a pinch

Method:-

cook the potato till fully cooked.Keep aside. and mash them..Heat a pan add oil n cumin seeds n turmeric n mashed potatoes ..add chilli pwd garam masala n salt per taste n mix cilantro n make the filling...

Take 2 slice of bread butter one side of the bread n fill the filling on one side n toast n sandwich maker ..

serve with mayo n chill sauce...

: variation u can add onions before u add potatoes..can use green chili instead of redchillis..

Seasoned Buttermilk --yogurt

Buttermilk – 1/2 cup yogurt mixed with 1/2 cup water blended
Small onion (shallots) – 3
Ginger – 2 tsp, chopped
Green chili – 3-4
Red chili whole– 2
Turmeric powder – 1/4 – 1/2 tsp
Mustard – 1/4 tsp
Fenugreek – a pinch
Curry leaves
Salt
Oil

Heat oil in a pan & splutter mustard & fenugreek seeds. Add red chili, small onion, ginger, green chili, curry leaves. Fry it for 1-2 minutes. Add turmeric powder & salt. Mix well. Add buttermilk and stir. Stir continuously . It will take around 5-7 minutes. stir for a few more minutes...Serve with plain rice//

Sweet Lassi





Sweet Lassi ..Yogurt Sweetened Drink


1 cup of yogurt
½ a cup of water
3 to 5 teaspoons of sugar


Blend all the ingredients at high speed till frothy.

Makes two to three glasses of Lassi...

Serve Chill..

Tawa Paneer






PANEER TAWA MASALA




1 cup paneer

1-2 tbsp oil

1/2 tsp ajwain

1 onion, finely chopped

1 tsp ginger-garlic paste

1 tsp red chilli powder

2 tomatoes

3 tbsp cream or sour cream

cardamon 2

cloves 3

1/2 tsp garam masala

finely chopped cilantro n ginger to garnish




Cut Paneer into cubes. Heat oil in a pan and add ajwain. Saute onions on medium heat

Blend ginger-garlic , sour cream, tomatoes,chilli pwd,cardamon n cloves into a paste.. add to the onions. Add the GM, stir and then add paneer. Mix well.

Turn the heat up and saute till all moisture dries up
Garnish with finely chopped cilantro. Serve hot with roti

Italian flavoured Roasted potatoes

4 potatoes, 
2tsp tablespoons olive oil
2 garlic cloves, minced optional
1 tsp tablespoons dried parsley flakes
1 tsp oregano dried
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 tsp chilli pwd or paprika

Heat a pan add olive oil and garlic..add the diced potatoes an cover cook until half done..now add chill pwd or paprika ,salt n oregano n parsley n pepper n cook until done...serve hot..

GArlic Naan





Garlic Naan.


1 1/2 cup all purpose flour
1/2 tsp salt
1 tsp active dry yeast
3 tbsp warm skim milk
1/2 cup plain yogurt
1/2 tsp sugar
1 tsp garlic clove, minced
corainder leaf few for garnish
butter or ghee

1. Dissolve sugar in milk and add yeast. Stir to combine and allow to rest for 5-10 minutes.
2. In a large bowl, blend flour, salt, and seasonings.
3. Pour in the milk and yogurt and stir with a spoon until you are unable to do so. Continue by kneading until all flour is incorporated and dough is soft and elastic.
4. Form into a ball, return to bowl and cover with a damp towel for 1 hr
5. When ready, pull dough into 5-10 pieces
6. Roll out to 1/8″ thickness.
7. In hot skillet, melt butter or ghee.
8. You can also bake your naan: Turn oven to 400°F, line a baking tray in aluminum foil, brush dough with butter, ghee or olive oil, bake until dough begins to bubble and brown..

Goan Vegetable Caldeen






Goan Vegetable CAldeen


Carrot 1 cut in cubes
potatoes 2 cut in cubes
beans cut into small pieces
cauliflower 1/2 cup
ginger garlic paste 1 tsp
green chilly 4
onion 1
corainder leaf half bunch
coconut fresh 2 tbsp
salt per taste
oil 1 tbsp
greenchilly /corainder leaf for garnish
2 tbsp coconut milk


Directions | Vegetable Caldeen

Grind to a fine paste the coconut ,corainder leaf ginger garlic green chilly .

Heat a pan add oil sauté onion ,garlic and ginger paste, add the coconut paste once the onion turn translucent

fry for a few minutes until the raw smell disappears .

Heat a pan sauté the veges until half done n add to the gravy n cook well..add coconut milk and simmer the gravy

Just give a boil once u add coconut milk and remove from fire .

garnish with coriander leaf n green chilly


Serve with White rice....

* can substitute chicken or fish fillets...

Ingredients


1 pound seedless grapes,
1/2 cup water
2tsp sugar

method
Fill the jar with half grapes n water of your blender Blend on high at least 1 minute. Strain through a fine-mesh sieve over a large bowl, pressing down on the solids in the strainer with a large spoon to extract . can add 2 tsp or more sugar if needed.. Serve chilled.

Prep time: 5 mins

Coriander chutney.. A dish served with any starter n pap pads

Ingredients:

Fresh coriander leaf 1 bunch
3-4 green chilies
yogurt 2 tsp
greenchillis.. 3
garlic clove 1
Salt

Method:

In a blender grind coriander leaf yogurt green chillies n garlic into fine paste n serve as a dip for any starter or pappadams...

Mango Lassi



Mango Lassi ....Mango flavoured yogurt drink

1/2 cup Mango pulp (readymade canned puree or fresh mangoes can be used)
1cup Yogurt
1/4cup Water
1tbsp Sugar
Icecubes

Blend together mango pulp, sugar, water , yogurt and ice cubes..blend well for few seconds until they turns frothy...

Serve them chilled!

Carrot, Potato, Vellarika ( white Pumkin ), raw Banana, long beans,  curd, turmeric, salt as per taste, coconut grated curry leaf, coconut oil, green chilli,

method cut all vegetables in length wise like french fries and cook all with little water till all veges are soft....grind curd with curry, leaf green chilli... grind coconut little fine or   just crush the coconut in blender...add the coconut to the veges and cook well...give it a boil and remove from flame and add coconut oil and curry leaf ..

serve with sambar or rasam.

Easy Potato Fry



EAsy Potato Fry ...recipe for anyone to try..

Ingredients:
3 large potatoes, washed, peeled and cut into small circles..
pinch of turmeric pwd
1/2 tsp red chilli pwd can add more if u need spicy
salt to taste
1 tbsp oil

Heat oil pan, add the masalas once they fry add potatoes. mix well so that the masala coats
Reduce to medium flame and cook for 4-5 mts, add salt to taste, place lid and cook till the potatoes turn soft, . Stir inbetween, scrapping the sides of the dish as the potato tends to stick to the vessel....

Serve with rice n any gravys...

Tomato Fry






Quick n easy Tomato Fry..

Diced Tomato – 3
Sliced Onion – 1 big
Chilly powder – 2 tsp
Turmeric powder – 1/4 tsp
Ginger garlic – crushed garlic 3 to 4 n small piece of ginger cut into pieces..
Green chilles slit – 2 opt
Water – 1/2 cup
Salt – to taste
Oil – 1 tbsp
mustard seeds 1/1 tsp
corainder pwd 1 tsp

Method:-

Heat oil in a pan, add mustard, onion,salt into it.Saute it until onion turns translucent..Stir in ginger garlic and saute it for few minutes.Now add chilly powder and turmeric powder, coriander pwd and fry it for a while. Add in tomato and saute until it turns soft .Add water and allow it to boil.Simmer it ..coriander leaf for garnish...

serve with Rotis
