Punjabi pakoda kadhi..

Method

Pakoda

1 cup Gram flour

1 Chopped onion

1 tsp greenchilli
oil for frying pakoda
Salt As per taste

Kadhi
1 cup Curd (yogurt)

1/4 cup Gram flour

2 no. Dry red chili whole

1 tsp Turmeric powder.

A pinch Asafetida

1 tsp Fenugreek seeds.

!/1 tsp mustard seeds


2 tbsp Oil.

Mix all pakora ingredients except oil and add about ½ cup of water. Mix well.

Heat oil in a Kadhai and deep fry vegetable and gram flour mixture after making into small balls. Fry till pakoras are golden brownBeat Curd/Yogurt and mix gram flour in it. Blend thoroughly so as to ensure that there are no lumps. Add turmeric powder, salt and 3 cups of water.
Heat oil in a Kadhai. Add mustard,fenugreek seeds and dry red chili curry leaf. . Bring it to a boil and simmer on a slow fire for about 15 minutes. Stir occasionally.
Add fried pakoras and again simmer the punjabi kadi for about 5 minutes.
Serve punjabi kadhi hot with steamed rice. or jeera rice..

Indo chinese chilly paneer//

50 gms Paneer
2 tsp Salt
1 tsp Garlic minced
1 Chopped Onions into cubes
1 Red capsicum cut into cubes..or green capsicum
1 tbsp Soya Sauce
1/4 tsp Ajinomoto
1 tsp or more REd chilly paste..

Method chilly paneer:

Cut the paner into cubes.Heat a pan add garlic, onions capsicum n cook until soft.. salt, soya sauce, , ajinomoto and the fried paneer cubes. then add redchilly pasteMix well, and garnish the chilli paneer with finely cut spring onions and coriander.

you can deep fry paneer in a cornflour egg batter if u want more authentic recipe..

this version is not deep fried paneer.

serve with chinese noodles..

VEge cutlet

Potatoes(medium) - 2 nos
Beans - 5 - 6 nos
Carrot - 1 no
Beetroot(small) - 1 no (optional)
onion 1 small diced
ginger garlic paste 1/2 tsp
Corn flour - 2 tbsp or egg one no...i used egg..
Oil - 1 tbsp
Red chilly powder - As reqd
Salt - As reqd
garam masala
Coriander leaves - 1/2 cup opt..i didnt use this time..
(finely chopped)
RAva ..or bread crumbs

Preparation Vegetable Cutlet Recipe

Cook veges in a pressure cooker.Mash them lightly.Heat a pan add onion , gingergarlic paste n saute ..add the cooked veges..Add all the other ingredients and mix well.

Shape as desired into medium sized cutlets.
dip in egg n coat wiht RAva or bread crumbs n shallow fry in oil...


:- It may take 20 - 30 mins.

:- Serve hot with chutney or ketchup.

Angel fruit cake with fruit cream

Ingredients

1 (10 inch) angel food cake or any readymade sponge cake..or can bake cake at home
1 (8ounce)container frozen Whippeed cream lite
Apple 1
banana 1
1/2 cup grapes..
1/2 cup dole cut fresh fruit..
Cranberry few to decorate
oreo crumbled to decorate..

Directions

Cut the cake n arrange one layer dish.
Fold in whipped topping with the fresh fruits..spread the whipped cream mixture over the cake.make layer forming cream n cake...
top with cranberrys n oreo .. Chill until serving.

potato cutlets  Aloo Tikki


Potato Cutlets/AlooTikki/

Ingredients:

White potatoes – 4, large
Black pepper – to taste
Cilantro – 2, tbsp, finely chopped
Salt – to taste

Method:

Wash the potatoes keep in microwave for 5 mins . Drain, peel and mash them with coarsely using a fork while they are still hot. Once they are cool enough to handle but still warm, add black pepper powder and salt to taste and mix well.Shape them into patties, heat a pan add oil n shallow fry n serve with cholle as a chaat with onions n sev n onions..

Coriander pesto..
Big bunch of coriander
1 whole bulb of garlic, peeled
few raw almonds or macadamia nuts/
about 1 tbsp extra virgin olive oil
2 green chillies
salt and black pepper to taste

In a blender, addthe almonds, then coriander and garlic m chilly until all chopped into little pieces. Add oil until the mixture looks wet but not soupy. Add salt and black pepper to taste

Keep in refrigerator until use...or serve with tortilla chips.

Dahiwala Baigan..

Ingredients

Brinjal 4
Yogurt 1 cup
Fresh milk 3 tbsp cup
Green chilies chopped 4
Coriander leaves chopped ½ bunch
Mint leaves chopped ½ bunch
Black pepper crushed 1 tsp
Roasted & crushed cumin 1 tsp
Oil as required
Salt to taste

Ingredients for Baghaar tadka,

Whole red chilies 4
Fenugreek seeds few
Curry leaves few
Oil 1 tsp
cumin seeds ½ tsp

Method

Cut brinjal into round slices and soak in water as required. n shallow fry in oil.

In a bowl mix yogurt, fresh milk, salt to taste, 4 chopped green chilies, chopped coriander leaves, mint leaf, cumin and 1 tsp all spice powder. Mix well and keep aside

Pour the yogurt on top. n mix the fried brinjals.


In separate pan heat oil, add in a pinch of fenugreek seeds, few curry leaves, whole red chilies and , cumin seeds. Pour baghaar on top of yogurt mixture and serve with briyani ...





Lemon Rice




Lemon rice..

Cooked Rice - 2 cups prefer cold rice
turmerici -- 1/2 tsp
peanuts 2 tbsp
Mustard seeds 1 tsp
curry leaf
corainder leaf few for decoration
oil - 1 tsp
lime or lemon juice of 1 ..
green chilli 2 or 3
redchilli 1


method : Heat a pan add oil and mustard seeds when crackle add curry leaf, red chilli green chilli peanuts and let the peanuts cook ...add haldi and slowly add the cooked rice and mix till all the rice is coated ..add lime juice on the rice and mix well , corainder leaf for garnishing and salt per taste. serve with pickle n pappad
yummy like rice like the way they serve as prasadam in temples is ready....try using basmati rice for a change ...tastes different...

STRAWBERRY PRESERVES or jams

1 cup. strawberries, chopped into chunks..
Sugar 1 cup or 1/2 cup if u need less sugar..

In a Pot mix the cut strawberries n cook until the berries are soft add sugar n heat Bring slowly to boiling. Boil until berries are clear and syrup thick. Skim and pour into hot jars. Seal the jam preserves..

Garlic Murukku ..chakli..



Chakli....Murukku...

Ingredients

Butter – 1 -tbsp
chilli powder – 1 tsp
Oil – to fry
rice flour – 1– cup
salt – -as needed
sesame seeds -1 – tbsp
Basin– 1 /2– cup
Ajwain 1 tsp
Garlic 4 cloves grated
water – as needed

Instructions

In a bowl add Rice flour, Basin, grated garlic, sesame seeds,ajwainsalt,chilli powder,butter, mix well and add water as need.Make into a soft dough.

Now take the murukulu press add the dough into it and press on top into the oil and make a round.
Fry till light golden...Ready ...

i didnt use sesame this time..but u can add some for extra flavour..

Aval with Jaggery..

Ingredients

1 cup - Beaten rice / poha/ Aval
1/2 cup - Freshly grated coconut
3/4 cup - Jaggery syrup
2 pods - Cardamom, powdered


Method

1 ) Fry the beaten rice with little oil.

2) Make a syrup out of jaggery n strain

Mix all the ingredients listed with beaten rice.
