Easy Citrus Cake

Citrus cake..

Ingredients
1 cup all purpose flour
1/2 cup unsalted butter, at room temperature or 1/4 cup butter
1/2 tsp baking powder
1/2 cup sugar
1 tbs fresh lemon zest or orange zest
2 tbs lemon juice
2 eggs
1 tsp vanilla extract

Directions

Preheat oven to 350 degrees F. Sift the flour, baking powder keep aside. Beat sugar and butter until light and fluffy. Add lemon zest, vanilla essence and eggs. Add flour mixture beat until the batter is smooth. Bake in a pan for 40 to 45 minutes or until a tooth pick inserted into the center of the cake comes out clean. Sprinkle powdered sugar...And Enjoy with fresh whipped cream or with tea..

DAhi VAda


Dahi VAda

For VAda
Black gram(Urad dal) - 1 cup
Salt - 1/2 tsp

onion 1 cut into pieces
Oil for deep frying

For curd mixture:-
Yogurt - 1 cup
REd chillies - 2 - 3 nos
Salt - 2 tsp
Oil - 1 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 1 sprig
Corainder leaf few to decorate


Method for Vada

Soak black gram for 4 - 5 hrs. and grind into smooth paste add onions and deep fry the vad..Beat the curd n mix well..Heat oil in a small pan or kadai. Splutter mustard seeds and saute curry leaves red chilies. Pour it over the curd. Mix well. Drop the prepared vadas in it and use when it is fully soaked. decorate with corainder leaf....serve it chill or hot..

Cilantro Hummus



Cilantro lime hummus..Chickpea dip

Ingredients
1/2 cup garbanzo beans (chickpea), soaked overnite n boiled..
2 tbsp..cup extra virgin olive oil or more to grind 
lime juice 1 tsp 
3 tsp minced garlic
few springs roughly chopped cilantro
1/2 tsp chilli powder.. or green chill 
3/4 tsp salt per taste//
a pinch cumin powder optional...

Place everything in a Blender and blend together until smooth and creamy. Serve with pita chips...yum..

Egg Briyani






Ingredients :



3 large eggs (boiled and peeled)
1 medium sized onion (finely sliced)
1 tomato diced
1 tsp ginger-garlic paste
1/4 tsp turmeric powder
3 Green chillies
1/2 tsp chilly powder 
1 tsp coriander powder
1 tsp cumin seeds
1" Cinnamon stick
cardamon 2
1 tsp biryani masala
1 tsp lemon juice
cilantro to garnish
fried onions to garnish
Oil / ghee
Salt to taste

For rice:
2 cup basmati rice (long grain)
water to boil
food color a pinch..
salt
oil

Method:


Cook basmati rice until well done. Add little oil and salt and cook while cooking rice..boil eggs cut the eggs and fry it in a pan both sides with some oil, salt and chilly powder n pepper pwd.. 

Heat a pan add oil add cumin seeds when they crackle add cinnamon stick cardamon n onions fry until translucent ..add ginger garlic paste once the raw smell goes add tomatoes n cook well...then add all the chilly pd..corainder pwd.turmeric n briyani masala n fry well..add little water to make a gravy..once the gravy gets thick add fried egg...

Layer the rice n the gravy with fried egg...n keep in flame for 10 mns until the flavour gets into the rice..top with fried onions n little food color n decorate with cilantro leaf...squeeze lime juice...n can add one tsp ghee (clarified butter) for more better taste....

Chana Bhatura




Chana 2 cups soaked overnite n boiled with turmeric,,
Turmeric powder - 1/2 tsp
Cumin seed powder - 1 tsp
Chilli powder - 2 tsp
Garam Masala - 1 tsp
Yogurt - 1tbsp
Coriander powder - 1 tsp
Cardamom - 2
Clove - 3
starnise seed 1
Ginger garlic grated 1 tsp
Salt per taste
Onion - 2
Tomato - 2

 Chana Masala Prepration :


Soak channa overnite before the preparation and pressure cook it with turmeric till soft..


Take a pan and add little oil, sauté star anise,cardamom, clove and add Ginger garlic paste.onion fry till  raw smell goes add tomatoes n fry 


mix curd with chill pwd,coriander pwd,turmeric,cumin pwd and add with onion n tomato n let it simmer for sometime add salt per taste n grind the masala...add garam masala powder ..


Add boiled chana n let it cook until the masala gets soaked n the chana...serve with puri or chapati...

Ingredients
2 cups cauliflower cut into small pieces,
1 onion
1 tomatoes, 
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
1 tsp chilli powder
1/2 tsp garam masala
3 eggs
oil for the pan, 2 or 3 tablespoons

For Masala...

1/2 tsp Sesame seeds
2tbsp coconut grated
1/2 tsp Cumin seeds
cardamom 2 to 3 cloves
1 star aniseed
Garilic 2 to 3
fry n oil n blend into paste..

Directions

1. Finely chop the onion. Dice cauliflower into small pieces. .

2 In a pan heat oil sauté the ingredients for masala and grind it with 1 tomato...

3.Heat oil add onions n cauliflower, and add turmeric and cook till done.. add cumin powder chilli powder and the masala paste...cook well u can add water if u want it semi liquid...

4.Add 3 eggs one by one and close the lid until the eggs cook...dont use ur spatula or else the eggs may break..

5.Once the eggs cooked add garam masala and garnish with coriander leaf...

serve with Roti or Cumin Rice..

Paneer Aloo Tikki





Paneer Aloo Tikki..

Ingredients :

Onion -1
Potatoes -4
Greenchillies  -4
Paneer 1/2 cup
salt per taste
3 tsp oil
Turmeric 1/2tsp
Garam masala - 1/2 tsp

Method

Chop the onions into fine pieces..Boil potatoes peel the skin off and mash it..Heat a pan add onions green chillies turmeric and add mashed potatoes and garam masala at the end add grated paneer and turn off the flame Mix all..

Make small balls from these and press each of them lightly to form a circular shape..sprinkle oil on have add these tikkis to it and  shallow fry them..serve with ketchup..

Muthiya


Muthiya


Ingredients :


1 cup Gram flour (Basin)
1/2 teaspoon sugar
1 cup shredded cabbage
2 tablespoons whole-wheat flour
1 tablespoon kasuri methi
2 chopped green chili (adjust to taste)
1 teaspoon cumin seed (jeera)
1/2 teaspoon turmeric
1 teaspoon salt (adjust to taste)
2 tablespoons oil


For Seasoning and Garnish:


2 tablespoons oil
1/2 teaspoon mustard seeds
1 tablespoon sesame seeds
3 whole red chili
chopped cilantro for garnish.















Mixgram flour, whole-wheat flour, fenugreek, cumin seed, turmeric, green chili, sugar, salt n a bowl
Add the cabbage to the flour mixture and mix well. .
Make cylinder shapes with the dough n steam cook for 20 mins ..when they are cool cut into pieces


seasoning heat  oil .Add mustard seeds ,sesame seeds and red chili and the muthiya n fry well..
Garnish them with chopped cilantro. Serve as a appetizer with chutneys or tomato chilly sauce...

Sheera ..Rava kesari



Sheera..RAva kesari...

Ingredients
1 cup semolina (sooji)(RAva)
3 tbsp ghee
1/2 cups sugar
10 cashewnuts
10 raisins (kismis)
1/2 tsp cardamoms powder
a pinch orange or yellow food colour

Method
Dry roast the semolina in a pan for a few seconds till it gets slightly heated. Keep aside.
Heat ghee in a deep pan, add the cashew nuts and raisins and fry till they turn golden brown.

Add 3 cups of boiling water to the semolina and mix well, while stirring continuously.
Add a pinch of orange food colour, mix well and cook till the mixture becomes thick.

Add the sugar, cardamom pwd and mix well till it dissolves, Add fried cashews and raisins and mix well.
Garnish it with remaining cashew nuts, raisins.
Serve hot.

Thattai..Rice Cracker


Rice Cracker...Thattai

Rice flour - 1 cup
Urad dal - 4 tbsp , ground to fine powder
Chana dal - 2 tbsp i used roasted dalia as i didnt soak chana dal..
Butter - 2 tbsp
Red chilli powder - 1 tsp
Sesame seeds - 1/2 tsp
Salt - to taste
Oil - for deep frying

Method :

Mix all the ingredients and make a thick dough adding very little water at a time. Take a plastic sheet or a ziploc cover n make thin round shapes..with hands.

Heat oil in a pan and Deep fry till golden brown n crisp.
..Store in Airtight containter and serve it at tea time..

Lemon Pickle









Lemon  -  6 nos..
Gingelly Oil   -- 5 tbsp
Mustard seeds-3/4 tsp
Asafoetida powde -1 tbsp
Fenugreek seeds -1/2 tbsp
Turmeric powder- 1 tbsp
Degi mirch  or kashmiri  chilly powder or normal chilly pwd use less..  2 tbsp
Ginger, chopped-150gm
Garlic, chopped-150gm
Green chillies, slit-100gm-150 gm
Curry leaf few
Vinegar-  2 tbsp
SAlt per taste...

Method:
  • Steam the limes for sometime . Wipe the outside with a piece of cloth or kitchen tissue and cut each lime into 4 pieces and keep aside.
  • Heat oil in another thick bottom pan, fry mustard,Fenugreek seeds  then add ginger, garlic and green chillies, curry leaf and sauté till golden brown.
  • Reduce heat and add all the powders one by one and sauté. Then add lime and stir well.
  • Add vinegar and salt to taste and simmer in low heat till thick.
  • Bottle when cold.
  • Keeps for a long time.
Serve with Paratha and Rice...
