Brinjal Fry


Brinjal - 5 to 6..

Onions 1 no

tomato 1 no

ginger garlic paste 1/2 tsp

mustard seeds 1/2 tsp

Corainder pwd 1tsp

chilli pwd 1/2 tsp

turmeric 1/2 tsp

corainder leaf few to decorate

curry leaf

oil 2 tsp

method : dice brinjal lengthwise..heat oil add mustard seeds, when crackle add onions ginger garlic paste when raw smell goes add tomatoes.. and brinjal and cook until tender...add turmeric pwd chilli pwd corainder pwd, and fry well ..at end add curry leaf and corainderleaf...

Avaraikai Poriyal

This recipe reminds me of my motherinlaws preparation...she makes this for sambar and i just love it...

Avaraikai Broad Beans - few as needed for sabji.....
onion 1/2 onion cut into small pieces
Mustard 1/2 tsp
Cumin 1/2 tsp
turmeric 1/2 tsp
grchilli 2 nos
coconut grated for garnishing
oil 1 tsp

Heat 1 tsp oil when hot add Mustard and Cumin and when crackle add onion, avaraikai green chilli and sprinkle water and close the lid and cook until the avarai add turmeric cook well...until soft....remove from fire and add coconut...

Best had with sambar....and rice...

The most healty dal....says we can get power like a horse once u eat tht....






Horse gram 1 cup soaked overnite



Turmeric 1 / 2 tsp



chilli pwd 1/2 tsp



salt as per taste



coconut 2 tbsp



jeera 1/2 tsp



small onion few



garlic 2



mustard seeds 1/2 tsp






Cook dal with haldi and chilli pwd in a cooker till cooked...Grind coconut with jeera small onion 2 garlic into paste and add to the dal and give a boil..saute small onion add mustard when crackle temper to the gravy and add corainder leaf//






Ready to serve with rice or roti






Fish Fry




Pomfret : 1


turmeric : 1/2 tsp


chilli pwd : 1/2 tsp


Pepper : 1/2 tsp


salt as per taste


lime juice




method.. Easy and simple marination of fish with all the ingredients and fry the fish with oil...




thts the quick and easy method...




opt : can add ginger garlic paste , fish fry masala....

Vegetable curry.





VEgetable curry


Capsicum - 1Carrots - 1 , potatoes 2, beans - few, cauliflower - 4 to 5, green peas - 1/2 cup, onion 1, ginger garlic paste 1/2 tsp , 1, halidi 1/2 tsp , chilli pwd 1/2 tsp, corainder pwd 1tsp, jeera 1/2 tsp fennel seeds 1/2 tsp, garam masala 1/2 tsp, curry leaf, curd 1/2 cup cashew optional few , tomato...



method:


Cut all the vegetables in cubes and in a pan add oil add jeera fennel seeds onion fry well add ginger garlic paste and curry leaf tomato and make a paste add the vegetables and fry until the masala is coated ...now add haldi corainder pwd, chilli pwd , garam masala,and cook the vegetables..Mix curd with cashewnut and grind well into paste....add the curd and give the gravy a boil ..garnish with corainder leaf ...serve with chappati....tates like kurma but with no coconut...

optional instead of curd can mix milk and give it a boil....tastes gud

Lime Rice./.
Cooked Rice - 2 cups prefer cold rice
Haldi -- 1/2 tsp
peanuts 2 tbsp
Mustard seeds 1 tsp
curry leaf
corainder leaf few for dccoration
oil - 1 tsp
lime or lemon juice of 1 ..
green chilli 2 or 3
redchilli 1
method : Heat a pan add oil and mustard seeds when crackle add curry lead, red chilli green chilli peanuts and let the peanuts cook ...add haldi and slowly add the cooked rice and mix till all the rice is coated ..add lime juice on the rice and mix well , corainder leaf for garnishing and salt per taste.
yummy like rice like the way they serve as prasadam in temples is ready....try using basmati rice for a change ...tastes different...

Carrot, Potato, Vellarika ( yellow Cucumber) Pumkin , raw Banana, long beans, Yam, bittergord

curd, turmeric, salt as per taste, coconut grated curry leaf, coconut oil, green chilli,

method cut all vegetables in length wise like french fries and cook all with little water till all veges are soft....grind curd with curry, leaf green ,chilli...i grind coconut little fine as the normal recipe is just crush the coconut...add the coconut to the veges and cook well...give it a boil and remove from flame and add coconut oil and curry leaf

serve with sambar or rasam.

Mulagazhyam

Cucumber vellirika or chow chow ( chayote) : 1cup (diced) Toor Dal :1/2cup Turmeric powder :1/2tsp Red chilli powder ,

A very simple but tasty gravy..a family famous recipe....it has no coconut so even cholestrol free


method :


Boil turdal with with cucumber , haldi, redchilli powder , salt, when cooked well boil well saute small onions cut dark brown and add to the curry....add curry leaf and at the end coconut oil....


tasty family curry ready serve with spicy thoran like bindi or baigan ..








Cajun Potatoes...

Potatoes.... 5
oil
garlic 1 tsp
redchilli pwd 1 tsp

cajun mix pwd or

pepper 1/2 tsp
thyme 1/2 tsp
oregano 1/2 tsp

heat oil in a pan add garlic add potatoes fry well.. add chilli pwd or paprika, add cajun mix and saute until the pototes are golden brown

optional can make in oven ...





Mango Pickle :


Mango . 1


chilli pwd 1 tsp


salt to taste


haldi 1/2 tsp


fenugreek pwd 1/2 tsp


Hing 1/2 tsp

Gingelly oil  - 3 tbsp



Cut mango into small cubes.. mix mango with chilli powder and salt .. heat gingelly oil , mix hing, turmeric, Fenugreek pwd add in the mango ..at the end heat little oil and add when cold and mix all well with the mango pieces and keep in glass jar




homemade pickle ready ...used within 3 to 4 days
