Hanuman temple Vada recipe
1 cup urad dal (whole black gram lentil)
1 tsp peppercorns crushed..
1/2 tsp cumin seeds
1 tsp rice flour
1 tsp ghee (optional, replace with oil)
1/2 tsp salt (or as per taste)
Method
Soak the black lentil for at least 1 hour in water.
Drain the lentil well.Add the lentil to the processor and grind to a coarse paste. Add drops of water only if you are not able to grind it. Add peppercorns, salt, cumin seeds to the processor and grind it for few more seconds.
Take the batter in a bowl. Add rice flour and ghee to the mixture and blend it well with your hand.
Take a small piece of the batter and shape it into a small ball. Little small then lime. Place it on a greased plastic sheet (zip lock bag etc)
Grease your fingers to prevent the batter from sticking to your hand. Pat it gently.
Flatten it into a thin disc.
You can make a small hole in the middle with your finger. It is optional.
Slowly invert this plastic sheet onto your hands so that the disc falls easily onto your hands. This is possible only if you have greased the plastic well. You can alternatively use a wet cloth to pat the disc too. Drop this gently into a hot oil for deep frying. It should neither be too hot nor lukewarm. Keep it med-high.
Let it cook until it gets reddish golden color.
Remove and place it on a paper towel to drain of excess oil. These are crispy and yummy with a bite from peppercorns.

Peanut Chutney
Ingredients
Peanuts - 3/4 cup
Onion 1
Redchilly pwd 1/2 tsp or more as needed
Garlic pods 3
Salt as required
Tomato optional ...u can use tamarind or can grind without it.cumin seeds - 1/2 tsp optional
For the seasoningOil - 2 tsp
Mustard - 3/4 tsp
Preparation
Roast the peanuts . If you are using roasted peanut, then you can skip this step.
Add cumin seeds ,onion and fry well add garlic pods and fry well until well cooked .Add Chilly powder and let it cool before grinding into smooth paste with little water. you can add to tomato and fry with onion but i skipped this step today as i didn't have any...if you add tomato skip adding water before grinding...
Heat oil, add mustard seeds and pour over the chutney.
Dip is ready to serve with pita chips or Dosas.rice crepes.

Small Brinjal - 8 Nos
onion - 1 cut into small pieces
garlic cut finely 1 tsp
coriander pwd 2 tsp
chilly pwd 1/2 tsp
turmeric pwd 1/4 tsp ..
cilantro for garnish
Method
mix all the masalas and stuff into the brinjal with salt..cut the brinjals in 4 with the stem on place...heat oil add onions fry well add garlic pieces and the brinjals and cook ...add little water if needed....cover cook it well till the gravy coats the brinjals.....decorate with cilantro leaf....simple yet Delicious recipe...
opt..can add Garam masala..i didn't add any..
Serve with hot Rotis or any type of Rice..

Eggplant inTomato masala..
Baby eggplants(baingan) : 5
Onion: 1 chopped finely
Tomato paste : 2
Ginger: ½ inch,
Garlic: 5-6 cloves,
Turmeric powder: ¼ tsp,
Red Chilly powder: ½ tsp,
Coriander powder: 1tsp,
Green chilly: 2 white jalapeños
Coriander leaves to decorate
Salt per taste
Oil: 2 tbsp can use more or less as per ur wish..
Garam masala 1/2 tsp
Method :
Wash and cut Eggplant and slit them from both the sides. Chop onion very finely. Grind ginger garlic into paste. Heat oil in pan add sliced onions. and sauté till translucent.Now add ½ cup of water to onions, and cook well..Add ginger garlic, dry spices, eggplants . cook the eggplant till soft once cooked add tomato paste ..cook well until a ice gravy is formed and add the green chili ...Garnish with cilantro ..
Simple but yet delicious eggplant masala...you can add garam masala of your choice...
Enjoy with Roti or Curd Rice..

RAva idly
My mom makes the best Rava idli..n this was the best i could make...
Ingredients
1 cup semolina (rava)
2 to 3 tbsp yogurt
1/2 tsp baking soda
salt to taste
oil for greasing the trays
For The Tempering
1 tsp Mustard seed
2 green chillies , chopped
4 curry leaves opt
1 tsp chana dal
Few cashews pieces
cilantro
Method
Mix the semolina, yogurt and salt together in a bowl. Keep aside .Prepare the tempering by heating the oil and adding the mustard seed ,chana dal, green chillies and curry leaves. add the tempering to the semolina batter.Add cilantro Add the soda mix well and pour the batter into greased idli moulds. Steam for 7 to 10 minutes.
Serve hot with a chutney or podi..
Enjoy!!!

Pasta Sauce
Pasta sauce ..
Ingredients:
4 ripe tomatoes..
1 onion
5-6 cloves garlic, minced
1tsp. sugar
Pinch of dry oregano
pinch of dry rosemary
1 tbsp olive oil..
Salt and pepper, to taste
method:
In a pan saute garlic until soft and fragrant in 1 tbsp. of olive oil, add onion and sauté till transparent add tomatoes and tomato paste and cook well.. add the oregano and rosemary and little water and cook until a sauce thickens..
Mix it with cooked pasta and serve ..
optional can add 1 tbsp of tomato paste to get the color..you can avoid it as they contain preservatives...Enjoy cooking

Easy Citrus Cake
Citrus cake..
Ingredients
1 cup all purpose flour
1/2 cup unsalted butter, at room temperature or 1/4 cup butter
1/2 tsp baking powder
1/2 cup sugar
1 tbs fresh lemon zest or orange zest
2 tbs lemon juice
2 eggs
1 tsp vanilla extract
Directions
Preheat oven to 350 degrees F. Sift the flour, baking powder keep aside. Beat sugar and butter until light and fluffy. Add lemon zest, vanilla essence and eggs. Add flour mixture beat until the batter is smooth. Bake in a pan for 40 to 45 minutes or until a tooth pick inserted into the center of the cake comes out clean. Sprinkle powdered sugar...And Enjoy with fresh whipped cream or with tea..

Dahi VAda
For VAda
Black gram(Urad dal) - 1 cup
Salt - 1/2 tsp
onion 1 cut into pieces
Oil for deep frying
For curd mixture:-
Yogurt - 1 cup
REd chillies - 2 - 3 nos
Salt - 2 tsp
Oil - 1 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 1 sprig
Corainder leaf few to decorate
Method for Vada
Soak black gram for 4 - 5 hrs. and grind into smooth paste add onions and deep fry the vad..Beat the curd n mix well..Heat oil in a small pan or kadai. Splutter mustard seeds and saute curry leaves red chilies. Pour it over the curd. Mix well. Drop the prepared vadas in it and use when it is fully soaked. decorate with corainder leaf....serve it chill or hot..

Cilantro Hummus
Cilantro lime hummus..Chickpea dip
Ingredients
1/2 cup garbanzo beans (chickpea), soaked overnite n boiled..
2 tbsp..cup extra virgin olive oil or more to grind
lime juice 1 tsp
3 tsp minced garlic
few springs roughly chopped cilantro
1/2 tsp chilli powder.. or green chill
3/4 tsp salt per taste//
a pinch cumin powder optional...
Place everything in a Blender and blend together until smooth and creamy. Serve with pita chips...yum..

Egg Briyani
Ingredients :
3 large eggs (boiled and peeled)
1 medium sized onion (finely sliced)
1 tomato diced
1 tsp ginger-garlic paste
1/4 tsp turmeric powder
3 Green chillies
1/2 tsp chilly powder
1 tsp coriander powder
1 tsp cumin seeds
1" Cinnamon stick
cardamon 2
1 tsp biryani masala
1 tsp lemon juice
cilantro to garnish
fried onions to garnish
Oil / ghee
Salt to taste
For rice:
2 cup basmati rice (long grain)
water to boil
food color a pinch..
salt
oil
Method:
Cook basmati rice until well done. Add little oil and salt and cook while cooking rice..boil eggs cut the eggs and fry it in a pan both sides with some oil, salt and chilly powder n pepper pwd..
Heat a pan add oil add cumin seeds when they crackle add cinnamon stick cardamon n onions fry until translucent ..add ginger garlic paste once the raw smell goes add tomatoes n cook well...then add all the chilly pd..corainder pwd.turmeric n briyani masala n fry well..add little water to make a gravy..once the gravy gets thick add fried egg...
Layer the rice n the gravy with fried egg...n keep in flame for 10 mns until the flavour gets into the rice..top with fried onions n little food color n decorate with cilantro leaf...squeeze lime juice...n can add one tsp ghee (clarified butter) for more better taste....

Chana Bhatura
Chana 2 cups soaked overnite n boiled with turmeric,,
Turmeric powder - 1/2 tsp
Cumin seed powder - 1 tsp
Chilli powder - 2 tsp
Garam Masala - 1 tsp
Yogurt - 1tbsp
Coriander powder - 1 tsp
Cardamom - 2
Clove - 3
starnise seed 1
Ginger garlic grated 1 tsp

Chana Masala Prepration :
Soak channa overnite before the preparation and pressure cook it with turmeric till soft..
Take a pan and add little oil, sauté star anise,cardamom, clove and add Ginger garlic paste.onion fry till raw smell goes add tomatoes n fry
mix curd with chill pwd,coriander pwd,turmeric,cumin pwd and add with onion n tomato n let it simmer for sometime add salt per taste n grind the masala...add garam masala powder ..
Add boiled chana n let it cook until the masala gets soaked n the chana...serve with puri or chapati...
